B+S Black Noodle Cooker

The B+S Black series noodle cooker has been designed to meet the changing needs of commercial kitchens. This multi-purpose cooker has been designed with for flexibility - it can be used not only for noodles, but also for pasta cooking, soup warming, ‘cheung fun’ rice pastry steaming and ‘yum-cha’ dumpling steaming.

The unit incorporates an inbuilt water overflow for removal of excess starch. It also features a basket insert self-closing mechanism for increased efficiency. A multi-setting gas valve allows for enhanced flame regulation, enabling both rapid boiling and simmering.

B+S Black Duck Oven

The B+S Black series duck oven has been specifically designed to produce a more even roast for duck, pork and other meats. Constructed with a thick stainless steel skin, it features volcanic rocks mounted on a grate above a powerful ring burner. This ensures that heat is radiated evenly throughout the oven chamber. 

A lever handle gas control allows for greater regulation of flame setting, while flame failure and a safety overheat are fitted as standard.

B+S Black Waterless HE Steamer

The B+S Black series waterless heat exchange (HE) steamer reduces water consumption in cooking operations such as yum cha and rice roll steaming. It is designed without the need for water deck cooling while ensuring that the exposed surface temperatures are kept to a minimum, preventing deck buckling. Meanwhile, heavy duty stainless steel frame construction durability and a long appliance lifespan.

The unit incorporates a concealed water-boiling chamber that is automatically filled as required. This not only eliminates the possibility of inadvertently leaving  water taps on, but also ensures that no more water than is needed for cooking is consumed. Steam generated from within the chamber is released into the steamer tray cooking area via a steam vent located on top of the appliance.

Using 15% less gas than other steamers on the market, the HE steamer is highly efficient while still providing excellent steaming performance. Water boils in less than 20 minutes from an ambient temperature of 20 degrees Celsius, while water consumption is reduced by up to 100 litres per hour.

The B+S Black series Pot Steamer has been designed to meet the vigorous demands of Asian fast food kitchens and restaurants.

This unit is heavily constructed on an inner stainless steel frame that prolongs your appliance’s life. Knowing how demanding the yum cha trade is, B+S has designed a steamer, which can handle the demanding trading period.

Driven by a powerful 170 Mj, 32-jet burner, this unit has a ceramic lined heating chamber. This ensures maximum heat is retained within the chamber required to heat the heavy-duty water pot.

B+S Black Waterless Stock Pot Cooker

The B&S Black series waterless stock pot cooker delivers high performance while reducing your kitchen’s water consumption. The need for water deck cooling is eliminated through the inclusion of an air gap between the ring and the cooking deck, which ensures that exposed surface temperatures are kept to a minimum. Combined with a timed water flow to the laundry arm, this also serves to reduce water usage.

This unit is powered by an 105Mj 24 jet chimney burner or 126Mj 18 jet duck burner, both fitted with flame failure. The cast-iron trivet with extended fingers allows for efficient gas combustion, while lever handle gas control enables greater regulation of flame setting. The heavily insulated long skirt unflued cast iron ring minimises radiant heat. 

The cooker incorporates a solid AISI 304 stainless steel frame and thick stainless steel plate, ensuring a long appliance lifespan. Ease of cleaning is enhanced through features such as a front waste gutter and 1.5mm pressed top.

B+S Black HI-PAC Wok Cooker

The B+S Black series HI-PAC wok cooker is essential for contemporary  Asian restaurants in meeting the demands of high turnover and quick response times. The unit incorporates the latest in gas combustion technology, along with a heavy duty steel frame that’s built to last.

Features include a ceramic lined heating chamber with a flue system, which directs hot air to a rear pot for boiling water. This model does not require water deck cooling, thereby reducing water consumption and costs.

The air-forced burner can be smoothly regulated using the B+S-designed lever action brass valve. The control box incorporates a flame failure safety device and auto-ignition function, as well as a working status indicator.
